The Artcooks! Lindsey Spinks best broccoli soup recipe!

In this weeks edition of The Artcooks, Lindsey Spinks has swapped a pencil for a serving spoons and shared a recipe for her best broccoli soup!
Lindsey Spinks Best Broccoli Soup
- 1 red onion, finely diced
- 1 tsp garlic oil
- 1 large potato, diced
- 1 vegetable stock cube in 1.2Litre Water
- 400g broccoli, chopped into florets
- Salt and pepper to season
Method
- Fry the onion in garlic oil until translucent.
- Boil the diced potato for 10 minutes until tender, then add the broccoli and cook for a further 4-5 mins.
- Blend all the ingredients together and season with salt and pepper.
- Serve with crusty bread or cheese toasties.
